Jeruselem Artichoke Tubers to plant (Craigie PH2)

This is a hardy perennial vegetable that is very easily grown much like potatoes. Plant it and it will send up huge very tall stems which eventually flower into small sunflowers later on. Makes a good temporarg edible alternative to a hedge. It duplicates itself under the soil producing a massive crop. Pick right when you want to eat it at any time of the year as it doesn't store well at all. Leave some in the soil and they'll come back next year. This can get invasive so put somewhere you don't mind it spreading. Cook the same way you would a potato, peeling first. This contains inulin, a sugar that doesn't digest well so don't eat too much at once, theres herbs you can add to meals that help with digestion.
