Zucchetta Trombochino squash (Matawan)

I have some large squash that we can't keep up with. We are eating squash pancakes every day! These are also called Gagootz or Cuczza Longa. They taste similar to Zucchini when young. The skin gets hard as they mature(then they need to be peeled.)
