1.5kg of pickled sushi ginger (Maidstone ME15)

Was given to my mum in the Asian shop two days ago, for free, against her protest. It expired that day, and though we’ve been keeping it in the fridge ever since, we have no use for it. Anyone needs it before it’s going in the bin? (I hate wasting food but I can’t do anything with it)
